Parmigiano Reggiano DOP – The King of Cheeses
Parmigiano Reggiano, often hailed as the "King of Cheeses," is an iconic Italian cheese celebrated for its unmatched quality, rich flavour, and centuries-old tradition. Protected by DOP (Protected Designation of Origin) status, it is produced exclusively in the provinces of Parma, Reggio Emilia, Modena, Bologna (west of the Reno River), and Mantua (south of the Po River).
Crafted using raw, unpasteurized cow’s milk, salt, and natural rennet, Parmigiano Reggiano is made following time-honoured techniques that preserve its authenticity and distinct character. The cheese is aged for a minimum of 18 months—often extending to 24, 36 months, or more—allowing it to develop its signature granular texture and complex, nutty flavour.
Exceptionally versatile, it can be grated over pasta, risotto, soups, and salads, shaved into slivers for antipasti, or enjoyed on its own with fruits, nuts, or honey. Even the rind can be used to enrich broths and stews, minimizing waste and maximizing flavour.
