Pecorino Sardo is a distinctive sheep’s milk cheese from the island of Sardinia, steeped in centuries of local cheesemaking heritage. Recognised under DOP (Protected Designation of Origin) status, this traditional cheese is a proud expression of Sardinia’s culinary identity.
Known for its rich, robust flavour, Pecorino Sardo offers a taste profile that evolves with age—from the mild and creamy notes of the younger Fresco variety to the sharper, more tangy intensity of the aged Stagionato and Vecchio versions. Its texture ranges from firm and smooth when young to crumbly and dense as it matures.
Aged in stages to develop distinct flavour profiles:

Fresco – Aged for a few weeks, mild and tender

Semistagionato – Aged 2–4 months, balanced and aromatic

Stagionato – Aged 5–7 months, firm with deeper flavour

Vecchio – Aged 8+ months, bold, tangy, and crumbly
