Smoked Scamorza – Subtle Smokiness, Classic Italian Craft
Smoked Scamorza is a traditional Southern Italian cheese, originating from regions such as Apulia, Calabria, and Campania. Its name comes from the dialectal word scamozzare, meaning “to remove” or “to strip off,” referencing its unique shaping process.
Made from stretched and kneaded fresh curds, Scamorza is shaped into a round or pear-like form, tied with string, and hung to age. The smoked variety undergoes a gentle smoking process that imparts a golden-brown exterior and a distinct, savoury flavour.
With a semi-soft, elastic texture, Smoked Scamorza melts beautifully—becoming gooey and stringy—making it ideal for baking, grilling, or layering into hot dishes. As it ages, it develops a richer, more robust taste that complements its subtle smokiness.
