Taleggio is a traditional semi-soft, washed-rind cheese from the Val Taleggio valley in Lombardy, Italy. Made from cow’s milk, this renowned cheese is part of the washed-rind family—its surface regularly washed during aging to encourage the development of its characteristic aroma and complex flavour.

The interior is ivory to pale yellow, with a supple, creamy texture that becomes increasingly runny as the cheese matures. Its rich, tangy, and slightly fruity flavour is perfectly balanced by a subtle earthiness from the rind.

Known for both its bold aroma and smooth mouthfeel, Taleggio is highly versatile in the kitchen. It melts beautifully in risottos and pasta dishes, elevates sandwiches and polenta, and makes a standout addition to cheese boards.
